White Chocolate Popcorn Snack Mix (Easter Edition)

Ingredients
  

  • 8 cups Skinny Pop Popcorn Hands down our favorite! ?
  • 12 ounce bag of Ghirardelli white chocolate wafers
  • Spring Sprinkle mix we used these cute Sprinkles Indeed Funny Bunny Sprinklefetti Easter themed sprinkles ones from Amazon – feel free to use whatever you like!
  • Sliced Almonds optional

Instructions
 

  • Line a large baking tray with parchment paper, and spray lightly with nonstick spray. Set aside.
  • In a large pot, add the melted white chocolate wafers (we followed the directions on the package using the microwave — so easy!), then quickly pour in your popcorn and mix lightly. Continue to stir until all pieces are thoroughly coated.
  • Using a nonstick spatula, pour out your mixture and lightly press the mixture down and spread evenly across your large baking tray.
  • Top with additional toppings and your sprinkles.
  • Let mixture set at room temperature for at least an hour in order to harden.
  • Once hardened, break into smaller clusters using your hands, or use a knife to cut up into smaller pieces.
  • Store snack clusters in an airtight container in between layers of parchment paper for up to 5-7 days.
