Anyone else into Ancestry? Specifically Ancestry DNA, or the also very popular 23&Me? We definitely joined the hype a few years back, creating family trees, finding distant relatives, and all that fun stuff. Our favorite part hands down was waiting for those glorious leaves to pop up with more possible connections to explore….I mean, IYKYK. Anyways…we also did the spit swab kit and found out through 23&Me that we carry quite a lot of Irish in us. So, with that said, you would think we naturally perk up at the thought of St. Patrick’s Day and all that goes into the holiday to celebrate Irish culture and traditions. Well, I am here to tell you…no. Not at all. I know, I know. Shocking. We really need to get ourselves together, ha. While we love exploring our Irish roots, St. Patrick’s Day always creeps up on us no matter how hard we try to plan and anticipate for its arrival. Oh, well. Maybe next year we will plan a full week of celebration (doubtful, but us girls can dream…right?). Anyways, regardless of our lack of natural Irish intuition, we still claim our stake that we are 69% or so British & Irish, and we are super proud of it.

Our Skinny Matcha Popcorn Snack Clusters is the easiest green snack that you can throw together in under 10 minutes and bring with you to all those St. Patrick’s Day celebrations on your calendar. Not only is this quick snack easy to make, it is delicious and low calorie and low sugar. So, you can celebrate without the sugar crash after. Yay! You’re welcome!
As luck would have it , we had a favorite snack already in our blog archive, our Skinny Almond Popcorn Snack Clusters, which serves as the base to today’s perfect green snack. Then, we simply tossed it with some matcha powder to turn this delicious treat green. That’s it. And, don’t worry – the matcha doesn’t end up being overpowering in flavor at all. It pretty much serves as our green tinting agent. So, if you aren’t familiar with this ingredient, trust us, you won’t be eating tea.

What You Need
10 cups Skinny Pop Popcorn (Hands down our favorite! ?)
1 cup raw halved almonds, optional
1 cup brown rice malt syrup
3 tsp Matcha tea powder
Step by Step
1. Line a large baking tray with parchment paper, and spray lightly with nonstick spray. Set aside.
2. In a large mixing bowl toss your popcorn with your matcha tea powder until fully coated. Set aside.
3. In a large pot, heat the brown rice malt syrup over medium heat until it begins to bubble. Let it bubble for about a minute, then add in your popcorn and almonds (optional). Continue to stir until all pieces are thoroughly coated.
3. Remove the pot from heat. Then, pour your mixture onto your parchment paper lined large baking tray.
4. Using a nonstick spatula, lightly press the mixture down and spread evenly across your large baking tray.
5. Let mixture set at room temperature for at least an hour in order to harden.
6. Once hardened, break into smaller clusters using your hands, or use a knife to cut up into smaller pieces.
7. Store snack clusters in an airtight container in between layers of parchment paper for up to 5-7 days.
8. Enjoy!
