Skinny Almond Popcorn Snack Clusters

It’s snack time, and your craving for all things sweet and salty kick in. Ugh. Oh, no. ??‍♀️ Normally, this isn’t an issue. Pshh…we got this. ?? We have a whole drawer at home and work dedicated to storing an entire selection of “go to” snacks that are healthy and promise to keep us fueled before lunch, or that time between lunch and dinner. It’s fine… ?

So, ya…we could grab one of the usual items from our snack selection…a granola bar, almonds, pretzels, heck…maybe even a protein bar. But, let’s be honest. We are so bored…BORED! Who wants to eat a boring snack?! No one. ? Well, if you’ve been hit with snack boredom (we get it, it happens to all of us at some point) then we got your back. ? We love getting creative with snacks. And, let me tell you…today’s newest “skinny” snack creation has all the things your stomach is craving.

Add our Skinny Almond Popcorn Snack Clusters to your snack rotation and you will be saying, “Holy. Yum!” just like us. ?

Hurry, babes. It’s snack time, and we’ve got the best snack of the season to prep! ??

What You Need

10 cups Skinny Pop Popcorn (Hands down our favorite! ?)

1 cup raw almonds, halved

1 cup brown rice malt syrup

Step by Step

1. Line a large baking tray with parchment paper, and spray lightly with nonstick spray. Set aside.

2. In a large pot, heat the brown rice malt syrup over medium heat until it begins to bubble. Let it bubble for about a minute, then add in your popcorn and almonds. Continue to stir until all pieces are thoroughly coated.

3. Remove the pot from heat and pour your mixture onto your parchment paper lined large baking tray.

4. Using a nonstick spatula, lightly press the mixture down and spread evenly across your large baking tray.

5. Let mixture set at room temperature for at least an hour in order to harden.

6. Once hardened, break into smaller clusters using your hands, or use a knife to cut up into smaller pieces.

7. Store snack clusters in an airtight container in between layers of parchment paper for up to 5-7 days.
