The beginning of the “ber” months is here, and we can’t help but get excited for fall . But, the weather still screams summer in most parts of the country. If you’re a Texan like us, you are used to summertime pretty much all year long. With that said, we are looking forward to cooler weather just as much as the next person. But…before we bid adieu to summertime baking and dive into all things pumpkin spice, cinnamon and peppermint bark, let’s give a final ode to summer with these swoon-worthy Lemon Velvet Cake Balls.
We have been dying to create a lemon cake worthy of our praises. Year after year we settle on one, but find it to be just “ordinary”. Therefore, we have found ourselves continuously pushing this project to the next upcoming summer season. Well, the wait is over. We are happy to say this is it! If you love you some lemon cake, or are in the mood for a refreshing recipe that delivers the perfect amount of lemon tartness, you’ve come to the right place. The taste is simply divine. To be honest…we have served this cake to some friends and family that aren’t big fans of lemon or tart desserts, and they LOVED it just as much (we are talking “asking for seconds” kind of love). High praise, if you ask us!

NOTE: Want to make a cake instead of cake balls? No problem! Skip the cake ball steps, and simply bake using the directions above for 2 9-inch rounds, and frost when cooled using the same frosting steps. You can even embellish with the cake ball decor we did, or go “naked” with no toppings at all. Simple and delicious!
