White Chocolate Popcorn Snack Mix (Easter Edition)

From the words of the late, great Kenny Rogers, “You gotta know when to hold em, know when to fold, know when to walk away, no when to run…you’ve gotta count your money…”...okay, okay. You get it! ? Listen, the world is looking a little different right now. A positive in all of this is that we are all going though it together, and with that, we have been in the same mode as some of you. We. Are. Baking! ?

In addition to your daily routine looking different, let’s just face it. Easter is going to look a little different, too. But, that’s okay! When are we ever going to have the excuse to take more time to enjoy those around us, or the free time we never get?

Let’s embrace this time with the idea of trying new things, sharing news things, and just having fun! We highly suggest unleashing your inner baking badass during this time inside. If you want something quick and easy + kid friendly (all you moms trying to home school, cook, clean, work from home as well as TRY to include some me time…this is for you!) today’s featured post is for you! I mean, no one said Easter at home has to be boring. ?

May we introduce you to our ? Easter edition of White Chocolate Popcorn Snack Mix?! This sweet snack mix is thrown together with popcorn, melted white chocolate, and topped with a fun Easter spring mix of sprinkles for the cutest holiday treat! I mean, come on….the sprinkles have tiny little bunnies and carrots! We also threw in some almonds to ours, so feel free to add your own additional items (nuts, raisins, sunflower or pumpkin seeds, chocolate chips…whatever you like!) to create your own mix. It’s the perfect snack that can give everyone something fun to take part in, won’t exhaust you, and it’s delicious!

Go on babes (and, bunnies ?)…pop some popcorn and get mixing!

What You Need

8 cups Skinny Pop Popcorn (Hands down our favorite! ?)

12 ounce bag of Ghirardelli white chocolate wafers

Spring Sprinkle mix (we used these cute Sprinkles Indeed Funny Bunny Sprinklefetti Easter themed sprinkles ones from Amazon – feel free to use whatever you like!)

Sliced Almonds (optional)

Step by Step

1. Line a large baking tray with parchment paper, and spray lightly with nonstick spray. Set aside.

2. In a large pot, add the melted white chocolate wafers (we followed the directions on the package using the microwave — so easy!), then quickly pour in your popcorn and mix lightly. Continue to stir until all pieces are thoroughly coated.

3. Using a nonstick spatula, pour out your mixture and lightly press the mixture down and spread evenly across your large baking tray.

4. Top with additional toppings and your sprinkles.

5. Let mixture set at room temperature for at least an hour in order to harden.

6. Once hardened, break into smaller clusters using your hands, or use a knife to cut up into smaller pieces.

7. Store snack clusters in an airtight container in between layers of parchment paper for up to 5-7 days.
