Let’s just go ahead and address the ? elephant in the room. A popsicle post? Really? I know what you’re thinking. “Girl, summer is almost over.” ??
Okay, okay. We get it. Confusing, I’m sure. But…ummm…let’s all be honest. It’s still hot AF out there! ??
With that said, babes…we’re still feeling the heat of summer (and, if we know anything about Texas heat…it’s most likely going to be here well through fall and into the beginning of winter ?)! Therefore, we can all use another refreshing treat to keep us hydrated and cool well throughout September and beyond.
Why not embrace the heat, and celebrate an extended summer than our delicious Coconut Key Lime Popsicles?! When we think of summer, we embrace all things beach, ocean, sand…and, key lime pie! ??? ?
That is how our Coconut Key Lime Popsicle came into play. These pops will amaze those taste buds and give you a key lime kick that is sweet, icy, and zesty! ???
The combination of coconut, lime, and graham cracker crunch makes these popsicles the perfect summertime treat. All you need is a hand mixer, a couple of ingredients, and an ice pop mold.

What You Need
Popsicle mold (click here to view the one that we used, but you can use whatever mold you want)
1 cup coconut milk (full fat,low fat, or non-dairy) – *We chose SO Delicious Unsweetened Non-Dairy Coconut Milk to keep calories low and non-dairy
4 graham crackers, crushed in food processor
4 Tbsp. melted butter
1/2 cup greek yogurt (vanilla or regular)
4 Tbsp. honey
Juice of 3-4 limes
Zest of 3-4 limes
Step by Step
- Add graham crackers to a food processor and blend until crushed. Add your melted butter to the mixture and set aside.
- In a bowl add your coconut milk and begin to blend with a hand mixer for 5 minutes.
- Add your honey, lime juice, and lime zest and blend for another 5 minutes.
- Pour your mixture into your Popsicle molds. You can add a bit of mixture, then spoon some graham cracker mixture in the middle, and then add more coconut mixture on top or just add your graham cracker mixture all at the bottom of the Popsicle at the end by leaving an inch in each mold. It’s up to you!
- Place the Popsicle mold cover on top, and place sticks in each mold cavity through the hole.
- Freeze for at least 4 hours, or overnight.
- To remove Popsicles from the mold, let them sit on the counter for about 5 minutes. You can also fill up a large bowl, pan or container with lukewarm (not hot) water and dunk your molds in almost to the top for about 15-30 seconds. Serve immediately.
