Yep, it’s finally here. A recipe featuring the ingredient everyone has been waiting for (and most likely expecting). Today we are featuring our very own creation with pumpkin spice! Honestly, this is just the first of many you will likely see throughout the next couple of months from us, because…FALL. So, we won’t keep you waiting any longer. Let’s get to it…
We are still in a healthy state of mind, so we wanted to ease into the fall season by starting off with a healthier recipe that incorporates fun fall flavors. These Oatmeal Chia Pumpkin Spice Energy Bites were a perfect fit and a great compromise. Why? Because they don’t taste healthy! These energy bites are full of flavor, and really got us excited for what is to come this season! They taste just like a pumpkin spice cookie or latte, and the best part about them is that they are HEALTHY! Hallelujah! So, go ahead and get your spices out…we are making your new fall season favorite!
What You Need
2 cups rolled oats
2 Tbsp chia seeds
1/4 cup brown rice syrup
1/4 cup canned pumpkin
1/4 tsp salt
1-1/2 tsp pumpkin spice (see recipe below to make your own, like we did and measure out 1-1/2 tsp of it and store the rest)
Pumpkin Spice Recipe
– 3 Tbsp cinnamon
– 1 1/2 tsp ginger
– 1 1/2 tsp nutmeg
– 3/4 tsp allspice
– 1/2 tsp ground cloves
Step by Step
- Combine all ingredients in a medium sized mixing bowl. Use your hands or a rubber spatula.
- Once combined, roll mixture into 12 – 14 individual balls. You might have to squeeze them tightly together between your palms a couple of times to get them to effectively stick together. This is normal.
- Gently place each ball on parchment paper inside a small storage dish.
- Freeze for at least 20 – 30 minutes. Enjoy!
- Store in the refrigerator in an airtight container for up to 5 days.
