Healthy Coconut Bites (Bunny Tails)

With only six ingredients, they are gluten free, dairy free + no sugar added, these healthy coconut bites are the sweet treat of your dreams!

Ingredients
  

  • 1/4 cup almonds
  • 1/4 cup cashews
  • 1+1/3 cups unsweetened shredded coconut 1/3 cup for mixture + 1 cup reserve for rolling/topping
  • 8-10 Medjool dates pitted
  • 1 Tbsp coconut oil
  • 1 Tbsp water

Instructions
 

  • In a food processor, mix together the cashews, almonds and coconut until finely ground.
  • Add in the coconut oil, water and your pitted dates. Pulse until a dough forms.
  • Remove dough from processor to a small mixing bowl. Place mixture in the freezer for 20 minutes to firm up a bit. We found the dough to be warm out of the processor, so chilling it for a few minutes helps to make the dough rollable.
  • 4.Pour the shredded coconut for your rolled topping into separate bowl and set aside.
  • Using a measuring spoon or a cookie scoop (we used a 1 Tbsp scoop), scoop your dough and then roll into a ball. Finish by rolling each balls into the shredded coconut until fully coated.
  • Store your cotton tail bites in a covered container in the refrigerator for up to one week, or freeze for up to one month.
