Healthy Berry Breakfast Cookies

- 1 flax egg 1 Tbsp ground flaxseed meal mixed w/ 2-1/2 Tbsp water
- 3/4 cups all purpose flour
- 2 1/2 cups old fashioned rolled oats
- 1/4 cup Splenda or Stevia
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 1/8 teaspoon salt
- 1/2 cup + 1 tablespoon non-dairy milk we prefer almond
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract
- 2 teaspoons lemon juice
- 1/2 cup blueberries + 1/2 cup blackberries or mix in’s of choice
Pre-heat oven to 350 degrees F and line a large baking sheet with parchment paper.
Mix your flaxseed with water and let sit for a few minutes.
Next, add all dry ingredients to a large bowl and stir. Finish by adding all remaining wet ingredients and mix again until everything is combined.
Use a 1/4 measuring cup to measure out the batter onto the parchment paper. You might need to spray with a little non-stick spray. Pat the tops down a little and bake cookies for 15-18 minutes, until firm and cooked through.
Let cookies cool on a wire rack before eating.
Store in airtight container for up to 5 days, or freeze for two weeks!
