Preheat your oven to 250 degrees.
Combine cinnamon and Stevia together and set aside.
Slice each apple using a Mandolin on the 1 or 2 setting, starting at the base of the apple. If you don't have a slicer, you can also use a sharp knife. Just slice as thin as you can. The thicker they are, the less crisp they get. So, thin is best!
Sprinkle each slice with cinnamon and sugar mixture. We sprinkled only one side (trust us....it's more than enough).
Bake for 45 minutes, then flip each slice and bake for another 20 minutes (or until browned and crispy).
Store in airtight container for up to a week.
