Hoppy Spring y’all! Can you believe it? It’s finally warming up, and dare we say that the wintry mix of snow and gross sleet that we have been experiencing on and off for months is finally behind us for the season? 😧 Plus, with Easter approaching soon, we’ve been super obsessed with all things spring…so bring it on! Fall and winter are fun baking seasons, but we can’t get enough of spring sunshine, warmer days, blooming flowers, green grass…oh and of course carrot cake, lemon, and…sweet, sweet, coconut. ☺️ Let’s focus on that last one for a moment.
Oh, coconut. 🥥 We just love you. It’s a nostalgic flavor, especially when spring rolls around. It’s an Easter meal staple in our family – usually in the form of coconut cake or a coconut cream pie 🤤. We. Love. Coconut.

You know…for balance. We also realized it’s been a hot second since we’ve rolled up a bite sized protein ball or bite for our followers. 😎
So, here is a favorite healthy treat we have made a time or two, and now are sharing with you! These Healthy Coconut (Bunny Tail) Bites are just what the bunny ordered, y’all. Not only are they super cute 🐰, they are incredibly quick and easy to make! They taste like coconut cream pie. Seriously. 🤗 and, we promise…they don’t taste “healthy” at all, yet they are. With only six ingredients, they are gluten free, dairy free + no sugar added! Who knew you could have your cake and eat it, too? 💁♀️

What You Need
1/4 cup almonds
1/4 cup cashews
1 + 1/3 cups unsweetened shredded coconut (1/3 cup for mixture + 1 cup reserve for rolling/topping)
8-10 Medjool dates (pitted)
1 Tbsp coconut oil
1 Tbsp water
Step by Step
1. In a food processor, mix together the cashews, almonds and coconut until finely ground.
2. Add in the coconut oil, water and your pitted dates. Pulse until a dough forms.
3. Remove dough from processor to a small mixing bowl. Place mixture in the freezer for 20 minutes to firm up a bit. We found the dough to be warm out of the processor, so chilling it for a few minutes helps to make the dough rollable. 🙂
4.Pour the shredded coconut for your rolled topping into separate bowl and set aside.
5. Using a measuring spoon or a cookie scoop (we used a 1 Tbsp scoop), scoop your dough and then roll into a ball. Finish by rolling each balls into the shredded coconut until fully coated.
6. Store your cotton tail bites in a covered container in the refrigerator for up to one week, or freeze for up to one month.
