Well…we aren’t. Career and life goals, yes. Healthier eating? No. 😂 But, we get it if you are. It’s a new year! It’s one of the best times to jump start any new habit you want to incorporate. We. Get. It! 👏🏻 So, if you ask us, we think the most gentle way to successfully transition into new habits and move into 2021 is by making cookies. 🍪🥰

So, when we say another cookie we are talking about a healthy breakfast cookie, y’all! 🤗 It’s healthier so you can fit it right in with your “healthy restart” plans if that is your thing, but still delicious and full of sweet and tart flavor to fill your stomach and brain with happiness. Who doesn’t need more happiness rolling right into 2021? Yay! We all win, right!?
These cookies are so easy to make (one bowl!), and you can customize with all sorts of things as far as fruit, nuts and toppings. We threw in blueberries and blackberries for a healthy dose of antioxidants. Feel free to use any kind of fruit you want (or, omit for a sweeter option like chocolate chips, shredded coconut and nuts, or all of the above… 😎).
Berry Breakfast Cookies are also perfect for baking up a batch on a Sunday and keeping in a airtight container to grab and go throughout the week for a great snack or breakfast! We also suggest freezing, and microwaving one or two for 10-15 seconds for a delicious start to your day.
Let’s start 2021 the right way…with cookies!
What You Need
• 1 flax egg (1 Tbsp ground flaxseed meal mixed w/ 2-1/2 Tbsp water)
• 3/4 cups all purpose flour
• 2 1/2 cups old fashioned rolled oats
• 1 tsp baking powder
• 1 tsp ground cinnamon
• 1/8 teaspoon salt
• 1/2 cup + 1 tablespoon non-dairy milk (we prefer almond)
• 1/4 cup maple syrup
• 1 teaspoon pure vanilla extract
• 2 teaspoons lemon juice
• 1/2 cup blueberries + 1/2 cup blackberries (or mix in’s of choice)
Step by Step
1. Pre-heat oven to 350 degrees F and line a large baking sheet with parchment paper.
2. Mix your flaxseed with water and let sit for a few minutes.
3. Next, add all dry ingredients to a large bowl and stir. Finish by adding all remaining wet ingredients and mix again until everything is combined.
4. Use a 1/4 measuring cup to measure out the batter onto the parchment paper. You might need to spray with a little non-stick spray. Pat the tops down a little and bake cookies for 15-18 minutes, until firm and cooked through.
5. Let cookies cool on a wire rack before eating.
6. Store in airtight container for up to 5 days, or freeze for two weeks!
