Skinny Neapolitan Popsicles

Alright, let’s address the big elephant ? in the room, and move on, shall we? Quarantine. ? It has really been quite the “adventure” for all of us these past few months, ya? Okay. There you go. Global pandemic has been addressed. Now, walk with me on something more uplifting… With summer approaching (or, already here if you live in Texas…in fact, we aren’t sure it ever left), this “stay at home” situation needs to expire ASAP and for good. The sun is calling us ☀️, and we are more than ready! Stand with me! ✋ We. Are. Ready! On that note, summer brings with it poolside cocktails, cool treats, and we are so for it! Now, since all of us have been stuck inside and no doubt all together have gained the #Quarantine15 (sorry, last time I mention the current doomsday in today’s post), we are in the mood for a treat, but something light to transition ourselves into the summer bodies we all remember. Patience, babes…patience. ? ⛱ ?

One cool treat we can’t say no to are popsicles. They cool you down in the summer heat, and are extremely convenient. A favorite flavor? Why choose, when you can have one…no two…wait, three? Yes, three! That’s right…Neapolitan. ? Who doesn’t love three flavors in one? Three classic and delicious flavors all in one convenient treat. Done.

May we introduce to you our newest obsession? Skinny Neapolitan Popsicles! ? Our skinny twist on a classic includes all things you love about the original…classic vanilla, light and zingy strawberry, and decadent and rich chocolate flavors! Your taste buds will be satisfied with it, never noticing the slimmed down physique! It’s genius, and delicious! ?? ?

Our creation was mastered by substituting heavy cream for coconut milk + Greek yogurt, and swapping sugar for Stevia. Now you can enjoy a classic treat without compromising calories! Say goodbye to the couch and say hello to summer! But, let’s all just continue to social distance and wash our hands. No one wants to do this whole “stay at home for months” thing again, am I right? ?

Grab your ingredients (or, schedule an Amazon Fresh as we all have learned to love this service by now), prep your popsicle molds, and let’s get layering! Trust us. You’ll be running to the freezer and grabbing these to satisfy your sweet tooth (and sanity) all summer long! ?

What You Need

Popsicle mold (click here to view the one that we used, but you can use whatever mold you want)

Popsicle sticks

1 1/2 cups Greek yogurt (plain)

1 cup coconut milk canned (full fat,low fat, or non-dairy) – Place in the fridge the night before 

3/4 cup Stevia (we like Pyure brand)

1 1/2 tsp vanilla extract

8 oz fresh strawberries

3 Tbsp cocoa powder (unsweetened)

Almond or any nut milk (to thin as needed)

Medium sized funnel to help pour the contents into the molds (optional)

Step by Step

  1. Take your coconut milk can and drain out the excess water. 
  2. In one bowl mix your Greek yogurt, coconut milk (white creamy part), Stevia, and vanilla extract until smooth (this will then be divided into your three flavors).
  3. Pulse your strawberries in a food processor until pureed. Add in 1/2 cup of your Greek yogurt mixture you just made. Pulse/blend until smooth. Transfer into a pourable bowl/glass. Set aside.
  4. In another bowl whisk 1 cup of your Greek yogurt mixture and cocoa powder until smooth. Add in 1/2 Tbsp of milk at a time as needed until your mixture is slightly thin and not thick. Transfer to a pour-able bowl/glass. Set aside.
  5. Take your remaining Greek yogurt mixture and add in 1/2 Tbsp. of almond milk until it is a nice thin consistency. Pour mixture into a pour-able bowl/glass. Set aside.
  6. Grab your popsicle mold and add in your chocolate mixture to each mold only 1/3 of the way. I liked to use a medium sized funnel to pour the contents in each mold. It kept the mixture from hitting the sides and sliding down. The other option is to pour contents into a ziploc bag and then cut the corner and pour in that way. Place the popsicle mold in the freezer for 15-20 minutes until the mixture is set.
  7. Remove the popsicle mold from freezer and add your vanilla another 1/3 full for your second layer. Place in freezer again for 15-20 minutes to set.
  8. Remove popsicle mold from freezer and add your strawberry mixture as your last layer to the molds. Cover the molds with lid and add in your Popsicle sticks at this time to each mold. Place in freezer for 4-6 hours.
  9. To remove your popsicle from the mold, let them sit on the counter for about 5 minutes. You can also fill up a large bowl, pan or container with lukewarm (not hot) water and dunk your molds in almost to the top for about 15-30 seconds. You can also run the molds under warm water for about 20 seconds to help loosen them. Serve immediately.
