Y’all. Christmas is only a few days away. I’m not panicking. You’re panicking! ? Okay…okay…on a serious note…some of you have hustled. You’ve hustled HARD. Well done. Your shopping is complete, presents are wrapped, the house is decorated, you’ve baked all the holiday favorites, and now you are happily sitting back with your feet up, a cup of hot cocoa in your hand as you look around at all your accomplishments with admiration. Again…WELL…DONE. ?? We are so proud of you (and most importantly…extremely jealous! ???♀️).
Now…for those of you that are on the same page as us right about now (i.e. freaking out!), don’t throw in the towel just yet. You’ve got this! There is still time. And, today’s post is EXACTLY what you need to bake something that is a holiday classic as well as quick and easy.
This classic glazed gingerbread cookie recipe can be easily whipped up and rolled out in no time! That’s right…you can breathe again! Yay! ?
Can you hear that? Oh…no big deal. That’s just your entire family and friends singing your holiday praises as they take a bite of one of these incredibly delicious gingerbread cookies. Trust us…not only are they holiday worthy, they are so dang cute! ?

What You Need
For the cookies:
- 6 Tbsp unsalted butter (room temperature)
- 1/3 cup plus 2 tbsp dark brown sugar (packed)
- 1/3 cup molasses
- 1 egg yolk
- 1 3/4 cups all-purpose flour
- 1 Tbsp Dutch-processed cocoa powder
- 1/2 tsp baking soda
- 1 tsp ground ginger
- 1/2 tsp ground cinnamon
- 1/8 tsp ground cloves
- 1/4 tsp salt
For the glaze:
- 1 cup powdered sugar
- 1 Tbsp unsalted butter (melted)
- 1/2 tsp vanilla extract
- 2 Tbsp warm water
Step by Step
- Preheat oven to 375 degrees. Line two baking sheets with parchment paper or silicone mats and set aside.
- Whisk together the flour, cocoa powder, spices, and salt. Set aside.
- In a large mixing bowl and using a stand or hand mixer, combine the softened butter, dark brown sugar, and molasses until creamy and smooth.
- Next, add in your egg yolk.
- Lastly, pour in your dry ingredients and mix until fully combined (2-3 minutes) and a dough forms.
- Flour a large surface and start kneading your gingerbread dough and roll out to around 1/4 inch thickness.
7. Cut our your gingerbread cookies with whichever shape you wish (we chose a classic gingerman/woman).
8. Place your cut out cookies on your parchment paper lined baking sheets.
9. Bake cookies for 8-10 minutes. Watch them and pull them out once they are set. They will be soft to the touch but set around the edges. They will harden once cooled.
10. While your cookies are baking or right out of the oven, grab a bowl and combine your powdered sugar, vanilla, melted butter, and warm water. A glaze will form. Beat until nice and smooth.
11. Brush your cookies or dip them into your glaze and place on a cooling rack to cool. Add some colorful icing decorations as well if you wish! You can go as creative as you want or as classic as you want. We chose to stay with the simple and classic look.
