Piña Colada Spike-able Popsicles

The first day of summer has officially arrived, so the heat is here to stay, people! ☀?? That means we are going to need serious reinforcements in order to stay cool and hydrated. ⛱ Plus, they have to be delicious! Lucky for us, these delicious Piña Colada Spike-able Popsicles check both those boxes! ??

Enjoy this fun treat outside, inside, by the pool, or wherever you end up enjoying yourself in the sun. Plus, you can easily add rum or your favorite liquor to easily create a “boozy” treat, too! ? Or, don’t. These are perfect without the alcohol for the kiddos as well!

The sweet combination of pineapple, coconut, and lime zest make these popsicles so refreshing. All you need is a blender, a couple of ingredients, and an ice pop mold. Get ready to cool off, babes!

What You Need

Popsicle mold (click here to view the one that we used, but you can use whatever mold you want)

1 cup coconut milk (low fat or non-dairy) – *We chose SO Delicious Unsweetened Non-Dairy Coconut Milk to keep calories low and non-dairy

1 and 1/2 cups pineapple chunks

1/4 cups unsweetened coconut flakes OR 1/2 tsp. coconut extract

lime zest and juice from one small-medium lime

1/3 cup of rum (optional)

Step by Step

  1. Add all of your ingredients to a blender or processor, and mix until smooth.
  2. Fill the popsicle molds with your blended mix.
  3. Place the popsicle mold cover on top, and place sticks in each mold cavity through the hole.
  4. Freeze for at least 4 hours, or overnight.
  5. To remove popsicles from the mold, let them sit on the counter for about 5 minutes. You can also fill up a large bowl, pan or container with lukewarm (not hot) water and dunk your molds in almost to the top for about 15-30 seconds. Serve immediately.

Instructions
