Unicorns. ? It’s all the rage these days, and more importantly…it’s awesome! We are all about it in case you were curious. Who doesn’t get excited about unicorns?!
We wanted an excuse to get in on this fun trend, and here we are! It’s starting to get hot outside since summer is quite literally almost upon us. Therefore, we are in need of some fun, cool, refreshing, and most important, healthy snacks to keep us going either while lounging by the pool, between activities, or just in general. Hallelu! ??
Tada! Behold these delicious and fruity Unicorn Yogurt Bark Bites! ? Babes, either grab the fruits we chose below or grab your own favorites and let’s get chillin’!
What You Need
3 cups Greek Yogurt Plain (we chose Oikos Plain Greek Yogurt)
1/2 cup strawberries (cut into chunks)
1/2 cup blueberries
1/2 cup mango or pineapple (diced)
3 Tbsp. honey or agave syrup
2-3 Tbsp. Unsweetened coconut flakes
Step by Step
- Line an 8×8 or larger pan with parchment paper.
- Grab three microwavable bowls.
- Put your strawberries in one, blueberries in one, and mango/pineapple in the last one
- Microwave each bowl of your fruit separately for about 90 seconds. Then remove and use a fork to mash contents as much as possible. Be careful because contents will be hot!
*Don’t worry if all the fruit is not mashed. Little chunks of fruit still in the bark will taste just as delicious! - Add a cup of greek yogurt to each of your fruit bowls as well as a Tbsp. of your syrup. Mix thoroughly.
- Start by spooning half of your blueberry yogurt on the parchment paper to make your base of the yogurt bark.
- Then alternate little spoonfuls of the other kinds (mango/pineapple and strawberry) of yogurt on top of your base.
- Then add on top in spoonfuls the rest of your blueberry.
- Then use a fork or spatula and marble/swirl your yogurt a bit so the colors mix together.
- Sprinkle your coconut flakes on top of your mixture.
- Place plastic wrap on top and place your mixture in the freezer for 2-4 hours or even overnight.
- Remove from freezer and let thaw about 15-20 min. and then cut into your bark pieces.
- Enjoy!
