I don’t know about you guys, but we have carrot cake on the brain. Easter celebrations are popping up all over the place, and with Easter comes carrot cake. Enough said. It is seriously everywhere and we are all about it. Next to chocolate, carrot cake is one of our favorite sweet treats. It has the perfect flavors to transition our taste buds from winter to spring! The combination of spices with simple hints of sweetness put us in the mood for warmer weather and summertime, which will be here before we know it (hell to the yes!).

Today we are sharing a healthy version of this sweet treat, because we all want to indulge sometimes without all the heavy calories and sugar, am I right? Plus, we are always (seriously…always!) looking for a way to treat ourselves to something that tastes delicious, but also gives us the proper energy necessary to get through a jammed packed day.

These Carrot Cake Energy Bites are the perfect power snack. This recipe gives you the ability to quite literally have your (carrot) cake and eat it, too! ??? These energy bites are full of healthy ingredients that will power you through a busy day. Filled with protein, fiber, and no refined sugar, these energy bites are low in calorie and packed with serious flavor from cinnamon, ginger, cloves, allspice, raisins and medjool dates. We also used coconut flour because not only does it give you the proper coconut flavor for carrot cake, it is extra absorbent, which helps to soak up some of the juices from the carrot and keep the balls held together once rolled. They are truly delicious. With each energy bite weighing in at under 60 calories each, you can seriously treat yourself to as many as you want without any guilt!

What You Need

1 cup shredded carrots

1/2 cup rolled oats

1/4 cup medjool pitted dates (about 5-6 dates)

1/4 cup raisins

1/2 cup chopped walnuts

1/8 cup coconut flour

1/4 tsp cinnamon

1/8 tsp allspice

1/8 tsp ground cloves

1/8 tsp ground ginger

1/8 tsp salt

Step by Step

  1. Shred your carrots and pat dry with a paper towel. Set aside.
  2. Combine your coconut flour, rolled oats, spices (cinnamon, allspice, cloves, ginger) and salt in a small bowl and stir to combine. Set aside.
  3. Add your dates, raisins and walnuts to a food processor and pulse until fully broken down and combined.
  4. Add in your shredded carrots and combined dry ingredients to the food processor. Pulse until fully combined.
  5. Pour your mixture out into a small mixing bowl and give it a final stir.
  6. Using your hands, roll the mixture into small balls and place on a plate or small baking sheet.
  7. Let your energy bites sit in the fridge or freezer to firm up for 30 minutes.
  8. Enjoy!

Notes

You can store these energy bites in the refrigerator in an airtight container for up to 5 days (if they last that long). 🙂
