Oh January…we love you. Okay…maybe not 100%. Starting off each new year with a a clean slate can be amazing, but also daunting for some. Any New Year resolution-ers out there? January universally signals a perfect opportunity to try a new hobby, begin a new routine…especially cleaner and healthier eating. We aren’t really into the whole “resolution” thing if you ask us. We have found over the years we are personally more successful giving ourselves something tangible to achieve, small goals to reach for one after another in order to overcome bigger obstacles over time. Otherwise, you are setting yourself up for failure. No one needs that! In other words, we plan to kick ass and live our best lives all year long, not just for the first few months and then coast. Anyone want to join us?! Well then…read on! 🙂

Last year, we received amazing feedback on all the healthy recipes that we shared, and the energy bite posts were a clear fan-favorite. They are so easy to prep, store and carry around with you for easy and healthier snacking. Therefore, we plan to bring you some more of our favorite versions throughout the year to help keep you on track! If you are anything like us, healthier versions of your favorite indulgences are key to a successful healthy lifestyle. These energy bites do just that…provide you with the sweetness that you crave, but in a healthier, bite-sized form!

Our newest energy bite obsession are these Strawberry & Oat Energy Bites. They taste just like a strawberry Nutri-Grain bar! The sweet taste of strawberry combined with healthy oats to keep you full and energized in the morning is perfect to start your day off right. They also transport great and can be eaten as a snack at any time when you need something quick to eat.

They only take 5-10 minutes to whip up and enjoy.

So, as we always say, let’s get rollin’ babes!

What You Need

1 cup almonds

1/2 cup quick oats

1/4 cup vanilla protein powder (optional)

1/4 cup pitted dates

1-1/2 cup freeze dried strawberries

2 Tbsp. maple/agave syrup

1 tsp. vanilla extract

1 Tbsp. water

Step by Step

  1. Start by putting your almonds in a food processor and pulse a few times until they broken up into small pieces.
  2. Add in your oats, protein powder, dates, syrup, vanilla, and dried strawberries.
  3. Lastly, add in your water (if you need to add more that is okay) and pulse until everything is welled combined and a mixture forms thick enough to roll into balls.
  4. Roll your mixture into tablespoon sized balls. Lastly, roll and coat each ball in extra crushed almonds/crushed dried strawberries if desired.
  5. Store in the refrigerator or freezer in an airtight container for up to 7-10 days.

Serves: 18-20 bites Cooking Time: 10 minutes

Ingredients
