Champagne Glazed Baked Donuts

We don’t know about you, but 2017 has quite literally flown by. How on earth is it already 2018?! I guess the saying is true…time flies when you are having fun! We can’t wait for what is in store for us in the New Year. But, before we start writing down our 2018 New Year resolutions we have to send 2017 off in style, right? Well…say no more.

The C&C sisters have something perfect for your upcoming NYE celebration! That’s right…New Year’s Eve calls for friends, family, sweet treats and champagne to ring in all things new for 2018! So, why stop at the cocktails? This is the perfect excuse to infuse your baked goods with a little bit of bubbly to take the party to the next level!

This unique treat is both delicious and booze-y! Win, win! Plus, they only take one bowl to whip up and 10 minutes in the oven! They are also baked, therefore, less calories than a traditional deep-fried donut. Add some of your favorite champagne to some powdered sugar and you have a perfect glaze to top these delicious donuts for your New Year’s Eve festivities!

What You Need

For the Vanilla Baked Donuts:

2 6-cavity donut pans

2 cups all purpose flour

2/3 cup granulated sugar

2 tsp baking powder

1 tsp salt

4 Tbsp unsalted butter

2 eggs (room temperature)

2/3 cup + 3 Tbsp non-fat milk (room temperature), feel free to sub for skim or whole milk if you prefer

2 tsp vanilla extract

For the Champagne glaze:

3 cups powdered sugar

6 Tbsp champagne

white and gold sprinkles, optional

Step by Step

  1. Preheat your oven to 350 degrees.
  2. Spray 2 donut pans with nonstick spray, or grease with butter. Set aside.
  3. In a large mixing bowl, combine your flour, baking powder, salt and sugar. Set aside.
  4. In a medium mixing bowl, whisk together your eggs, milk, butter and vanilla extract. TIP: Make sure the melted butter has cooled and the eggs and milk are room temperature before mixing together. Otherwise the mixture will clump up!
  5. Add the wet ingredients to your dry ingredients and stir until fully combined. Do not over mix. Simply stir until no clumps of flour are visible.
  6. Spoon your batter into your donut pan, filling each cavity about 3/4 of the way full.
  7. Bake donuts for 8 – 10 minutes. Remove from the oven and let cool in the pan for a couple of minutes.
  8. Transfer donuts to wiring rack to cool completely before glazing.
  9. To create your Champagne Glaze, simply combine your powdered sugar and champagne and stir to create a glaze. If your glaze is still too thick, add more champagne. If too thin, add more powdered sugar until the glaze your desired thickness.
  10. Top with optional white and gold sprinkles and let sit for at least 20-30 for the glaze to fully set.
