Peppermint Mocha Energy Bites

It’s a holiday classic, and we are definitely all about it. Peppermint. Mocha. That’s right. We are most definitely apart of this cult-like obsessive group of people that wait for this drink to come back every year. Why, you ask? Just like a PSL signifies the official start to the fall season, the launch of the peppermint mocha makes it officially winter. Therefore, peppermint mocha is officially available, and we are very much into it. We have no problem sharing that we have driven ourselves to Starbucks to get this delicious treat several times already since it’s debut. Duh. We have no shame in our game. It’s delicious. End of story.

We decided to bring our obsession with peppermint mocha to the blog by featuring a pop-able bite size version that you can easily grab and take with you at anytime of day for some quick (and delicious) fuel. It’s always a good idea to have healthy options to grab when you are on the go all day long, so we created an energy bite that captures the coffee, chocolate, and peppermint flavors of this seasonal drink. Viola! These bite size babies are filled with flavor and taste just like a peppermint mocha! The excitement does not end there. These energy bites are leaner on the calories compared to a traditional peppermint mocha, and they include protein to properly fuel you through your day!

Grab your favorite espresso beans and let’s get rollin’ babes!

What You Need

1/3 cup dark chocolate chips

1/3 cup espresso beans

2/3 cup almond meal or flour

2 Tbsp. cocoa powder

6 Tbsp. chocolate protein powder (we used Tone it Up – delicious!)

1/3 cup nut butter (we used almond butter)

1/3 cup agave syrup

1/4 tsp. vanilla extract

8-10 peppermints crushed in food processor

 

Step by Step

  1. Combine your espresso beans and dark chocolate chips in a food processor and blend.
  2. Once blended, add in your almond meal, cocoa powder, protein powder, nut butter, maple syrup and vanilla extract.
  3. Lastly, fold in your crushed peppermint until nicely distributed.
  4. Roll your dough into small size balls. Sprinkle with some additional crushed peppermint for color and added flavor!
  5. Store in the refrigerator or freezer in an airtight container for up to 7 days.
