Who doesn’t love banana bread? It’s such a simple, yet delicious comfort food. Plus, it’s pretty simple to make, using only one bowl! Today’s recipe uses whole wheat flour and Greek yogurt, making it healthy and absolutely delicious! Plus, it’s very simple to make. Most importantly, banana bread is a great go-to option when you have leftover overly ripe bananas on hand. Come on…we’ve all been there, right? Before you think about throwing those brown bananas away, whip up one of these easy banana bread options and you will be so happy you did! ?

We’ve got you covered with a basic banana bread option that is sure to become a go-to favorite, and for those days you crave a little something extra we have included a cinnamon crumble version that is so good, it’s bad. ?

Basic and Delicious Banana Bread
2 eggs
1 cup bananas (mashed) *I basically mashed 2 medium sized bananas
3/4 cup sugar
1/3 cup coconut oil (melted)
1/2 cup greek yogurt (plain or vanilla)
1 3/4 cups whole wheat flour
1/4 cup cornstarch
1 1/2 tsp. baking powder
1/4 tsp. salt
Cinnamon Crumble Banana Bread*
All the above ingredients + 2 tsp. cinnamon
*For the Cinnamon Crumble Topping:
1/2 cup all purpose flour
1/2 cup brown sugar
1/4 butter (melted)
1 tsp. cinnamon
Step by Step
- Heat oven to 350 degrees.
- Spray a 9×5 inch loaf tin with coconut oil spray.
- Whisk your eggs, bananas, oil, greek yogurt, and sugar together in a large bowl.
- Sprinkle in your flour and cornstarch a little at a time and fold into mixture. Do not overmix.
- For your regular banana bread you are ready to go! For the cinnamon version add your cinnamon.
- Pour your mixture into your greased loaf pan.
- If you are opting for the cinnamon crumble, combine your topping ingredients and spread evenly on top of your mixture.
- Place in the oven on middle rack and bake for 60 min. Make sure to bake until your toothpick comes out clean or with a few crumbs.
