Tequila Lime Cupcakes

In honor of National Tequila Day today we are so excited to share with you the official cupcake of summer, Tequila Lime Cupcakes! They have joined our list of go-to recipe favorites, and are requested all the time by family and friends.

Yes, it is true that vanilla and chocolate cupcakes are usually our jam (you can’t mess with classic perfection), but these beauties are true showstoppers! The creamy vanilla and lime flavors infused with the perfect kick of Tequila flavor make these cupcakes our new party trick! They are a recipe you must try and perfect to enjoy during these hot summer days. Beloved by all who have tried them, they are the perfect treat to celebrate National Tequila Day! ?

So, go ahead and impress all of your friends by whipping up a batch of these irresistible Tequila Lime Cupcakes, and serve with your favorite Margarita! Cheers!

What You Need

For the Cupcakes

  • 1½ cups all-purpose flour
  • 1½ tsp. baking powder
  • ¼ tsp. salt
  • ½ cup unsalted butter
  • 1 cup granulated sugar
  • 2 eggs
  • 1½ limes (juiced/zested)
  • 2 Tbsp. tequila
  • ¼ tsp. vanilla extract
  • ½ cup buttermilk
  • 1 to 2 tablespoons tequila (to coat the cupcakes)

For the Frosting

  • 1 cup unsalted butter, at room temperature
  • 2¾ cups powdered sugar
  • 1 Tbsp. lime juice
  • 2 Tbsp. tequila
  • Pinch of salt

 

Step by Step

  1. Set your oven at 325 degrees.
  2. Line a 12 muffin pan with liners/parchment liners. Set aside.
  3. In a medium bowl whisk together your flour, baking powder and salt. Set aside.
  4. With an electric mixer, cream your butter and sugar until light and fluffy.
  5. Add in one egg at a time and mix thoroughly.
  6. Add in your lime zest/juice, vanilla extract and tequila. Mix until combined. It will be curdled by this time so don’t panic.
  7. Add in your dry ingredients in three different batches, alternating the buttermilk in between with two batches. Mix until only incorporated.
  8. Divide your batter between your muffin cups.
  9. Bake for about 25 minutes (rotating pan half way through) or until slightly golden. A toothpick will come out with a bit of crumbs attached.
  10. Allow cupakes to cool for about 10 minutes and then move to a cooling rack.
  11. Brush the tops of each cupcake with a bit of tequila.
  12. Let cupcakes cool completely before frosting.
  13. To make your frosting, whip the butter on medium for 5-6 minutes.
  14. Gradually add in your powder sugar.
  15. Add your lime juice, tequila, and salt and beat until a nice and fluffy consistency.
  16. Frost each cupcake how you like and garnish. We used cute lime wedges on each cupcake along with some sprinkles (we chose pink of course but you can do whatever color you wish!)
