I am sure we speak for a lot of you when we say that snacks are an important part of our daily lives. We heart snacks! 🙂 Sometimes they are the difference between staying on track with your healthy lifestyle and falling off and eating not so healthy options. Right now many of us are eating healthier in preparation for summer. So, that is why it is really important that not only we have snacks easily accessible during the day, but to also have snacks that are healthy for you and provide the right ingredients to keep you full and satisfied.
This Greek Yogurt Bark is so easy to throw together, and can be customized in so many ways! We love to throw some together at the beginning of the week and store in the freezer for those moments that you just need something to snack on. We cut into small portions simply to provide easier nutritional information for this post, but feel free to break into small pieces (just like you would with chocolate candy bark) for a quick and easy snack option!
We chose Dannon Light & Fit Greek Yogurt because it is only 80 calories per container, has a good amount of protein and is low in sugar. We love the vanilla flavor because it it perfectly sweet and compliments all types of topping options. Then, we added in some fruit and mini chocolate chips to build some bold flavors that will satisfy the tastebuds until your next main meal. We love these for a mid-morning or afternoon snack, or even as a healthy snack alternative late at night when the sugar cravings pop up. The frozen consistency makes it taste just like ice cream (yum!), and these bars are only 36 calories per piece! You’re welcome, and happy snacking! 🙂
What You Need
2 – 5.3 oz containers Dannon Light & Fit Greek Yogurt (we chose Vanilla)
1/2 cup strawberries (cut into chunks)
2 Tbsp (or 1/8 cup) mini dark chocolate chips
Step by Step
- Line an 8×8 pan with parchment paper.
- Place your Greek yogurt in the middle of the pan, and spread it around evenly with a rubber spatula until it is smooth and even.
- Sprinkle your strawberry chunks evenly on top of the Greek yogurt, followed by your mini chocolate chips.
- Freeze for 2 – 4 hours, or leave in the freezer overnight.
- Use a large knife to cut into 9 equal squares (36 calories each), or simply break into smaller pieces, like candy bark for an easy snack.
- Store in the freezer in a gallon freezer bag or airtight container for up to 1-2 weeks.
Some other flavor combinations that we love include (add each to 11-12 ounces of your favorite yogurt flavor base):
- Blueberry Coconut Almond: 1/2 cup blueberries, handful of shredded coconut, 1/4 cup sliced almonds
- Blueberry/Strawberry Granola: 1/2 cup blueberries (or strawberries), 1/4 cup granola
- Strawberry Banana + Peanut Butter Drizzle: 1/2 cup strawberries, 1/2 cup sliced bananas, drizzle of peanut butter (melt 1 Tbsp of peanut butter and drizzle over top)
- Triple Berry + Chocolate Drizzle: 1/3 cup raspberries, 1/3 cup blueberries, 1/3 cup strawberries, drizzle of chocolate (melt 1 Tbsp of chocolate chips and drizzle over top)
