Skinny Baked Chocolate Glazed Donuts

Enjoying fresh donuts from the local donut shop on a Saturday or Sunday morning is one of my favorites memories from when I was a kid. Our dad would come home with at least two boxes filled with endless options of donuts and breakfast pastries to choose from. If you have a large family like ours, you can totally relate to the reference of needing at least two boxes. All of us kids would practically tackle my dad at the door and begin fending off each other for our favorite flavors. Grabbing that last sprinkled glazed donut before someone else devoured it was always my goal. I especially loved the times when my dad would take us with him and we got to help select the different flavors from a mouthwatering variety of sugary treats behind the counter. 🙂 How fun it is to be a kid. Where did the time go!?

We still heart donuts as adults over in the C&C kitchen, so it would seem sinful to make one that takes away all the flavor in the name of “being healthy”. What is the fun in that? It wouldn’t be right. But, as you probably can tell by now, we also heart finding ways to make our recipes healthier but still taste amazing so that we don’t have to completely live without our favorite things in life. Life is simply better with sugar and chocolate. 🙂

Therefore, a baked donut versus a deliciously fried donut seemed like the better option. The BEST part about this recipe is that you won’t miss the frying part at all. This donut is so rich in flavor and completely hits the spot when craving a sugary treat. We took a recipe from Giada over at Food Network and adapted it by swapping a couple of the ingredients with things we preferred (i.e. coconut oil instead of grapeseed oil). We also added sprinkles to the topping because what is a donut without sprinkles? Am I right, or am I right? The recipe also does not include sugar, eggs or butter. So, you are not sacrificing an entire day’s worth of calories for a bite of heaven. Yay!

What You Need

Chocolate Donuts:

  • 1 Tbsp ground flax meal

Step By Step

  • Preheat your oven to 350 degrees.
  • Spray a donut baking pan with pan release or Baker’s Joy. Set aside.
  • Mix the flax meal in a large bowl with 2 Tbsp. of water. Let sit to thicken for a couple minutes.
  • In another bowl combine your flour, cocoa powder, baking powder, baking soda, and salt.
  • After your flax meal has thickened, add your almond milk, oil, syrup, and vanilla extract. Whisk together until fully mixed together.
  • Add your dry ingredients into your wet. Mix until combined.
  • Add in your chocolate chips and fold in.
  • Drop your mixture evenly into your donut baking pan. Fill each with 2-3 tbsp. of mixture.
  • Bake for 10-12 minutes. Toothpick should come out clean.
  • While your donuts cool, begin preparing the glaze topping by melting your chocolate chips in the microwave at 50% power for 30 seconds at a time until melted.
  • Add your cocnut oil to the melted chocolate and mix until smooth.
  • Dip the top of each donut into the glaze (allow the glaze to cover just the top half). Place each one onto parchment paper or a cooling rack.
  • Add sprinkles or any other toppings of your choice.
  • Place in fridge for 30 minutes to let glaze set.

Ingredients

  • CHOCOLATE DONUTS:

  • 1/2 cup almond milk
  • 1/4 cup coconut oil (melted)
  • 1/3 cup agave syrup
  • 1 tsp vanilla extract
  • 1 cup cake flour
  • 1/4 cup unsweetened cocoa powder
  • 2 tsp baking powder
  • 1/2 teaspoon baking soda
  • 3/4 tsp salt
  • 1/3 cup dark chocolate chips
  • CHOCOLATE GLAZE TOPPING:
  • 1/2 cup dark chocolate chips
  • 1 tablespoon coconut oil (melted)
  • Sprinkles, for topping

Instructions
