Peanut Butter Avocado Skinny Protein Brownies

Avocados are all the rage right now, right!? You can’t go anywhere without finding them incorporated into all kinds of menu items spanning from breakfast, lunch, dinner, all the way to dessert and even drinks! I am going to be honest. I have been pretty hesitant to try avocados in dessert recipes. Before this post, it didn’t seem possible that an avocado could deliver the right salty or sweet flavor that I was craving when it comes to desserts. But, when one of our favorite Flywheel Sports instructors insisted we try out a particular peanut butter avocado brownie recipe, we knew it had to be good. Just like us, she loves her sweet treats! These Peanut Butter Avocado Skinny Protein Brownies did not disappoint and are an amazing alternative when you want something chocolaty without all the calories. They are also packed with protein and natural sugar, providing you with the energy you need for an upcoming workout or to simply conquer the day! I wouldn’t mind enjoying one of these before my next Flywheel spin session! 🙂

What You Need

Wet Ingredients:

2 avocados, mashed

2 Tbsp coconut oil (melted)

2 eggs

1/2 cup maple syrup

1 tsp. vanilla extract

Dry Ingredients:

1/4 cup vanilla protein powder

1/2 cup oat flour (or almond flour)

1/4 cup unsweetened cocoa

1/2 tsp. baking powder

1/4 tsp. salt

2 Tbsp peanut butter (Do not mix! You will place this on top of your batter later.)

1 Tbsp. dark chocolate chips (if you want to add on top after baking!)

Step by Step

  1. Preheat your oven to 350 degrees.
  2. Grease a 9×9 inch baking pan with coconut oil spray or PAM. Set aside.
  3. Mix your wet ingredients in one bowl. Mix your dry ingredients in another bowl.
  4. Add your wet ingredients to your bowl with the dry ingredients. Mix until combined.
  5. Pour your batter into the greased baking pan.
  6. Drop your peanut butter on top of the batter and use a fork or spoon to make swirls. My peanut butter was stubborn, so I ended up mixing it into the batter more than intended. It still worked out just fine.
  7. Bake for 30-35 minutes until a toothpick inserted comes out clean.
  8. After baking and while your brownies are still hot, place some dark chocolate chips on top. Use a knife or spatula to spread the melted chocolate across your brownies creating some chocolate swirls. 🙂 You could also use peanut butter chips if you prefer more peanut butter flavor instead.
  9. Let cool and then enjoy!
