There is something about Rice Krispies treats that make them impossible to simply stop at one. The soft and sweet flavor of marshmallows combined with the crunch of the rice cereal is like kryptonite. Therefore, Rice Krispies treats were added a long time ago to the list of desserts my sister and I just can’t live without. Just like so many other desserts on this list, we found a way to make a lower calorie version so that we could enjoy more of them and more frequently (yay!).
So, in this post we are sharing our trick to low calorie Rice Krispies treats. Since we are about to celebrate St. Patrick’s Day, we decided to throw in some Lucky Charms marshmallows to appropriately celebrate. With that said, feel free to omit the Lucky Charms marshmallows if you end up making these any other time throughout the year. Our trick to making these treats low calorie is the butter (or, in this case butter flavoring). Trust us, you won’t even notice the real butter has been eliminated. We have been serving these for years to friends and family, and no one has ever asked or noticed that they were “low calorie”.
Our lower calorie version amounts to about 70-80 calories per square. You’re welcome! 🙂
What You Need
6 cups Rice Krispies cereal
7 cups mini marshmallows
3 Tbsp Granulated Butter Seasoning (Butter Buds or Molly McButter sprinkles)
2 Tbsp water
1/4 tsp vanilla
1/4 tsp salt
1 cup Lucky Charms marshmallows (optional)
Step by Step
- Grease a 9×13 inch pan with butter or pan release spray. Set aside.
- Add the marshmallows, granulated butter flavoring, water, vanilla, and salt to a medium sized saucepan, and mix on medium heat until fully melted.
- Remove the mixture from the stove, and add in your Rice Krispies cereal and stir until evenly mixed in.
- Stir in the Lucky Charms marshmallows (optional). *TIP: We set a few of the Lucky Charms marshmallows aside to top the Rice Krispies treats once placed in the pan.
- Pour your mixture into your greased 9×13 inch pan. With a greased spatula, press the rice krispies down until flat. Top with remaining Lucky Charms marshmallows. Let cool completely.
- Cut Rice Krispies treats into squares, and serve!
Lucky Low Calorie Rice Krispies Treats
