One candy I love every now and then is a delicious Almond Joy. 🙂 A chocolate chip cookie with a hint of almonds and coconut is just heavenly. Here is a simple recipe to get your candy bar fix but in a cookie.
Things to Know Upfront/Quick Tips
- You’ll want chopped/sliced almonds. You can get whole ones and put in a food processor to chop them. That is what I did. But don’t pulse/chop too much!
What You Need
Dry Ingredients:
- 3/4 cup granulated sugar
- 3/4 cup light brown sugar
- 2 1/4 cup all-purpose flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 2 1/2 cups chocolate chips
- 1 cup flaky coconut
- 1 cup chopped/sliced almonds
Liquid/Other Ingredients:
- 1/2 cup butter (salted) softened
- 2 eggs
- 2 tsp. vanilla extract
Step By Step
- Set your oven to 375 degrees.
- In a small/medium bowl combine your flour, baking soda, and salt. Set aside.
- Line your baking sheet(s) with parchment paper or a silicon mat.
- In a large bowl mix your butter and sugars until light and fluffy.
- Add in your eggs (one at a time) and vanilla. Mix until combined.
- Mix in the small bowl you set aside earlier with your flour, baking soda, and salt. Stir until just combined.
- Add in your chocolate chips, almonds, and coconut.
- Scoop out 1-2 Tbsp. of dough and drop onto your baking sheet 2 inches apart.
- Bake for 8-10 minutes. Take them out once the edges are slightly golden. Don’t overbake.
- Let cool for 5-10 minutes.
