Skinny Red, White & Blue Coconut Cocktail

Y’all. How is it already July?! Don’t mistake this statement as a complaint…quite frankly, we love summer! In fact, we prefer the heat to cold any day of the year. Don’t you love this time of year? Laying out in the sun by the pool, getting out the grill and the smell of delicious BBQ, and most importantly…celebrating the wonderful country that is AMERICA! ??? Heck. Yes!

While you’re celebrating all things U.S. of A, we highly suggest you whip up these amazing skinny concoctions to keep you cooled off while in the sun ☀ and during the fireworks show. They are easy, delicious, and low-calorie! Perfectly paired with all the burgers, hot dogs, and other sweet summer treats, this skinny libation is where it’s at!

So, go on and don’t stress about your liquid calories with this thirst-quenching red, white, and blue coconut flavored drink. ?? With only 10 calories per entire bottle of coconut vitamin water and your vodka of choice, this recipe makes your calorie count super low! Get blending, babes!

 

 

What You Need

*Recipe makes approximately 4-6 small cocktails.

1/2 cup vodka/coconut vodka

3 bottles of Bai Coconut or Core Water Coconut

2 Ice Cube Trays

Sugar or Sugar Alternative (for white sugar rim)

Coconut Oil (for white sugar rim)

Blender (If you are looking for a new blender, we highly suggest the Nutri Ninja Pro. It is budget-friendly and can pretty much do anything you need it to.) 

 

Step by Step

1. Rim your glasses in coconut oil and then sugar to create your “white” sugar rim.

2. Fill two ice cube trays with Bai Coconut or CoreWater Coconut Drink (one bottle usually will fill an entire tray). Add 1 drop of red food coloring to each cube in one tray and 1 drop of blue to each cube in the 2nd tray. Stir each cube with a toothpick to fully mix.

3. Let the ice cubes freeze for at least a couple of hours or overnight in the freezer.

4. Place the blue frozen cubes in a blender, add 2 shots of vodka and a 1/4 cup of your coconut drink.

5. Blend until ice is no longer chunky, but be sure not to over blend. Only a couple of seconds are needed, or use the pulse option until the mixture is smooth.

6. Divide the blue mixture between 4-6 glasses (depending their size).

7. Rinse out your blender and repeat for the red cubes. Add the red mixture on top of the blue mixture.

Viola! A delicious and skinny holiday cocktail!
