Key Lime Coconut Cookies

And just like that, it’s March. Now if the weather would just cooperate and bring more spring-like temps, we would be just fine. Until then, you can find us under a blanket, sipping on something warm, and most likely treating ourselves to one of these ah-mazing Key Lime Coconut Cookies, dreaming of the beach and fun times in the sun. 😋 🏝

If only you could smell these cookies through the screen. They are easily the perfect treat to add to your St. Patrick’s Day lineup. The perfect hint of lime and sweet kick of coconut make these cookies a surprise treat. Plus…they are dazzled with green sugar! 🙌🏻 Handing these out will guarantee not getting pinched, and most likely hugged. They are that delicious. I’m not gonna lie…I hope my pot of gold is filled with these babies.  💚🍀🌈🇨🇮

What You Need

2 3/4 cups flour

1/2 tsp. baking powder

1 tsp. baking soda

1/2 cup shredded coconut

1 cup unsalted butter (softened at room temperature)

1 1/2 cups granulated sugar

1 egg

1 tsp. vanilla

1/2 tsp. lime extract

2 tsp. lime juice (from bottle or squeezed from lime itself)

1-2 Tbsp. lime zest

5-10 drops light green/neon green food coloring

Step by Step

1. In a medium sized mixing bowl, combine your flour, baking powder, baking soda, and coconut. Set aside.

2. In a large mixing bowl, use a hand or stand mixer to cream your softened butter and sugar together until smooth and creamy.

3. Add in your egg, vanilla, lime extract, lime juice, and zest and mix until combined.

4. Add your lime green food coloring to the mix until you get your desired color (we like the more “key lime” light green color).

5. Begin adding your mixed dry ingredients a little bit at a time and mix until fully combined. The dough will be thick. Scrape down the sides and bottom of your bowl.

6. Scoop out your dough into Tbsp. size balls. Roll them in your neon green sanding sugar and place on a baking sheet or plate.

7. Chill your rolled balls in the refrigerator for around 30 minutes.

8. Preheat your oven to 350 degrees.

9. Grab your chilled dough and place each ball on your lined baking sheet about 2 inches apart.

10. Bake for about 13-15 minutes until the edges are a bit golden in color.  Let cool for 5-10 minutes.
