Protein Peanut Butter Cups

Anyone here a peanut butter fan? Ohemgee! We ❤️ peanut butter + anything chocolate in the C&C kitchen. So…what is better than a delicious and easy homemade sweet treat? Well, we could easily argue that a homemade sweet treat that is healthy for you to be the only thing that tops that!

We aren’t going to lie. We think our PB cup version could easily give the Reese’s original a run for its money. Holy yum. These homemade peanut butter cups are packed with protein from peanut butter and protein powder, plus the dark chocolate coating is extremely satisfying and rich in antioxidants. Win, win! We opted for Vega Vanilla Protein + Greens powder. It’s one of our go-to favorites. So, depending on what kind of powder you use you could count this treat towards you daily serving of vegetables (greens), too (wink, wink!). You could also sub the peanut butter for reduced fat or any type of nut butter that you might prefer. A creamy nut butter option is really the only recommendation that we have for this recipe, and one that isn’t too dry.

You can easily whip up a dozen of these in under an hour. Most of the time is spent in the freezer to set the chocolate, so minimum time is spent actually mixing the ingredients (yay!). So, go on and get your chocolate fix the healthy way with these perfect Protein Peanut Butter Cups! ? They are an amazing chocolate craving buster, and really hit the spot when you are craving something sweet at the end of the day.

What You Need

1/4 cup creamy peanut butter ?

2-3 Tbsp vanilla protein powder (or a little less than 1 serving/scoop)

1 cup dark chocolate chips

1 Tbsp coconut oil

coconut oil spray (to spray muffin liners)

Step by Step

1. Fill a muffin pan with parchment liners and spray with coconut oil spray. Set aside.

2. In a medium sized mixing bowl, combine your peanut butter and protein powder until smooth. Roll into 12 individual balls (about 1 teaspoon in size, a little less). Place in refrigerator to firm up a bit.

3. While your peanut butter balls are in the refrigerator, melt your chocolate chips and coconut oil in a microwave safe bowl, heating for 30 seconds at a time and stirring until fully melted.

4. Fill each muffin liner with 1 teaspoon of melted chocolate. Please in freezer to firm up for about 20 minutes.

5. Remove your muffin liners with chocolate from the freezer, and add one peanut butter ball on top of each, flatting each ball with your thumb or finger, or a non-stick spoon.

6. Fill each muffin liner with the remaining chocolate (about 2 teaspoons each), until the peanut butter is covered. You might need to spread the chocolate a bit to fully cover the peanut butter.

7. Return the muffin liners to the freezer to set for another 20-30 minutes. Enjoy!

Notes

Store in an airtight container in the freezer with or without the parchment paper liners for up to two weeks.
