Easy Half Batch Coconut Macaroons

One of the great things about having your own blog is you get to make all the rules about what you want to post and when to them. Therefore, we decided that even though Father’s Day has already passed, we are going to continue to celebrate our awesome Dad by sharing with you all one of his favorite baked treats. πŸ™‚

Alongside anything chocolate, another flavor our Dad loves is coconut. Coconut macaroons are something he loves to indulge in every now and then, and we have the easiest recipe! You can whip them up one small batch of a dozen at a time, and they are hands down one of our favorite recipes to make when you need something pretty fast. They don’t take that much time, and are packed with coconut flavor. Also, you can dip the bottoms in chocolate, or drizzle chocolate (or caramel if you prefer) on top for added flavor.

Cheers to our Dad, and all of the amazing fathers out there! Unfortunately, we don’t make all the rules as far as holidays go, but if it were up to us Father’s Day would be celebrated every day. πŸ™‚

What You Need

1/3 cup all purpose flour

2 3/4 cups shredded sweetened coconut

1/4 teaspoon salt

1/2 can of condensed milk (sweetened)

1 teaspoon vanilla extract

1/2 teaspoon almond extract

1/2-1 cup chocolate chips (to melt and drizzle on top after baking)

Step by Step

  1. Preheat your oven to 350.
  2. Line a baking sheet with parchment paper or a silicon baking mat.
  3. In a large bowl mix together your flour, coconut, and salt.
  4. Add in your condensed milk and extracts and mix until combined.
  5. Scoop out about 1.5-2 Tbsp. size balls onto your lined baking sheet.
  6. Wet your fingers and dab each ball where any coconut is sticking out so it doesn’t burn in the oven.
  7. Bake for about 12 – 15 minutes depending on your oven’s temperature. You don’t want to over bake the cookies. Bake until they are a bit golden on top and then let cool.
  8. Melt your chocolate according to directions and drizzle on top of each macaroon if desired. πŸ™‚
