“Hoppy Hour” Easter Coconut Chocolate Martini

Church has been attended. The Easter eggs have been hunted for and collected. Friends and family have successfully honored the Easter holiday over a good meal and conversation. Now what? It’s officially time to unwind with an after dinner “Hoppy Hour”, right? Well, look no further than this perfect libation to wrap up the Easter weekend. 🙂

This Hoppy Hour Easter Coconut Chocolate Martini is where it is at! Trust us. The combination of chocolate and coconut perfectly celebrate spring, and the chocolate dipped PEEP is quite literally the sugar on top of this fabulous cocktail. We lighten up our concoction as much as possible by using fat free milk. Feel free to use whole milk or even half and half if you prefer to wrap up Easter with something more rich in flavor.

NOTE: I have received a lot of compliments and questions about where I got these fabulous martini glasses. What You Need

2 oz. Godiva chocolate liqueur

1 oz. Coconut Rum

1 Tbsp chocolate syrup

2 oz. milk (we used fat free milk to keep the calories low, but feel free to use whole milk or half and half for a richer flavor)

For garnishing the rim of your glasses, you will need:

Chocolate Syrup

Coconut (finely shredded)

Chocolate Dipped PEEPS marshmallows (optional, but highly recommended)

Step by Step

  1. First, rim your glasses with chocolate syrup and the finely shredded coconut. Place chocolate syrup and finely shredded coconut in two separate shallow dishes. I also recommend giving your coconut a rough chop to make sure it is very fine. Dip each martini glass rim into your chocolate syrup, followed by dipping each one into the coconut. Set glasses aside.
  2. Second, in a cocktail shaker filled with ice combine your coconut rum, Godiva chocolate liqueur, milk and chocolate syrup. Shake thoroughly, then strain and divide into two martini glasses.
  3. Garnish by topping with a Chocolate Dipped PEEP marshmallow.
