Better Than Box Mix Homemade Chewy Fudge Brownies

To be honest, I don’t think there has been a brownie presented to me that I didn’t like. But, everyone has their own list of preferences if you had the choice. I have searched high and low for the best brownie recipe that will not only check the boxes for me, but also for my guy. He LOVES brownies probably more than anyone I know. So, he is very specific as to how he likes his brownies. Lucky for us, his criteria is a winner for everyone.

The brownie must be soft, extremely fudgy, include lots of chocolate chips, have that incredible flaky top, and have powdered sugar on top (the last one is obviously optional for everyone else, just not for our household ?).

This recipe delivers on every item above, and so much more! They taste exactly like (but even better than) a warm, fudgy skillet brownie from your favorite restaurant. Top it with a scoop of vanilla bean ice cream and some chocolate syrup, and you will be in dessert heaven. ???

Things to Know Upfront/Quick Tips

  • You will need a medium saucepan to melt the unsweetened chocolate with sugar and water.
  • Definitely use a square 8×8 inch baking pan (not rectangle). This produces a thicker, fudgy brownie, which is the goal in this recipe.
  • Good news! These brownies only take 30 minutes to bake!

What You Need

Dry Ingredients

  • 3/4 cup all purpose flour
  • 1 1/4 cups sugar
  • 1 oz unsweetened baking chocolate (chopped into smaller pieces)
  • 1/3 cup cocoa powder (regular — not unsweetened)
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup chocolate chips (+ a few more for topping)

Liquid/Other Ingredients

  • 1/4 cup water
  • 1/2 cup vegetable oil
  • 1 1/2 tsp vanilla
  • 2 eggs

Instructions

  • Preheat your oven to 350 degrees.
  • In a large mixing bowl combine your dry ingredients — flour, baking powder, cocoa powder, salt, and chocolate chips. Set aside.
  • Go ahead and grease a 8×8 inch pan and set aside.
  • In a medium saucepan combine unsweetened baking chocolate, water and sugar. Heat the ingredients over medium heat and continue to stir until the chocolate is melted and smooth. Remove from heat and allow it to cool for 2-3 minutes.
  • Grab your bowl of dry ingredients and add in your vanilla, eggs, and vegetable oil.
  • Add in the melted chocolate mixture from the saucepan and stir just until all ingredients are combined. Don’t over-mix.
  • Spread the mixture into your greased baking pan, and add some extra chocolate chips to the top of the mix.
  • Place in oven and bake for 30 minutes on the middle rack.
  • Let the brownies cool for at least 45 minutes before cutting and serving. Don’t worry — it will be worth the wait!

Notes

To keep any leftover brownies fresh for days (if any are left!), go ahead and pre-cut any remaining brownies. Place them in an air-tight container in between layers of parchment paper. Then, add a piece of bread to the top. They will stay fresh, and taste just like they came out of the oven. Warm them up in the microwave for 10-20 seconds for an even better "next day brownie" experience. 🙂
